Three-Layer Sour Cream Cake with Poppy Seeds, Walnuts & Raisins

Jump to Recipe

Three layer sour cream cake is a beautiful dessert made from one simple sour cream batter that becomes three completely different cake layers: one with poppy seeds, one with walnuts and one with raisins.

The layers are brushed lightly with simple syrup and covered with a smooth sour cream frosting, then left to chill so the cake becomes soft, moist and beautifully tender.

Every slice shows off all three layers, making this cake especially pretty for holidays, celebrations or whenever you want a homemade dessert that feels a little special.

Why You’ll Love This Recipe

  • One cake batter creates three different flavored layers
  • Soft and moist with a light sour cream frosting
  • Poppy seeds, walnuts and raisins give every layer its own texture
  • Can be made a day ahead
  • Gets even better after several hours in the refrigerator
  • Beautiful enough for holidays and special occasions

Ingredient Notes

Sour cream:
Use full-fat sour cream, preferably around 18%, for both the cake and frosting. The richer sour cream gives the cake a tender texture and makes the frosting thicker and creamier.

Poppy seeds:
They give one layer its distinctive nutty flavor and speckled appearance.

Walnuts:
Finely chop the walnuts so they distribute evenly throughout the batter.

Raisins:
Soaking the raisins briefly in hot water softens them. Dry them thoroughly before adding them to the batter.

Powdered sugar:
Powdered sugar dissolves easily into the sour cream and creates a smooth frosting.

Simple syrup:
A light brushing of syrup helps keep the cake layers extra moist as they chill.

How to Make Three-Layer Sour Cream Cake

Start by preparing the walnuts and raisins. Finely chop the walnuts, then soak the raisins in hot water for about 5 minutes. Drain and dry them thoroughly.

Beat the eggs with sugar and a pinch of salt until pale, thick and fluffy.

Mix in the sour cream, then gently fold in the sifted flour and baking powder.

Divide the batter evenly among three bowls.

Fold poppy seeds into the first portion, chopped walnuts into the second and raisins into the third.

Bake each layer separately in an 18 cm / 7-inch cake pan until lightly golden and a toothpick inserted into the centre comes out clean.

Allow the layers to cool completely.

Meanwhile, prepare the simple syrup and sour cream frosting.

Brush each cake layer lightly with cooled syrup, then spread with sour cream frosting as you stack the cake.

Cover the top and sides with the remaining frosting and refrigerate for at least 6 hours, preferably overnight.

Decorate with chopped walnuts, cake crumbs or poppy seeds if desired.

Tips for the Best Sour Cream Cake

Beat the eggs and sugar thoroughly. The mixture should become noticeably pale and fluffy before adding the sour cream.

Once the flour is added, mix gently so you don’t deflate the batter.

Dry the raisins well after soaking them. Excess water can make the raisin layer heavy.

Use preferably 18% sour cream if you can find it. A thicker sour cream makes the frosting easier to work with.

Make sure the cake layers are completely cool before frosting.

Don’t skip the chilling time. Several hours in the refrigerator allow the frosting and syrup to soften the cake and bring all the flavors together.

Make Ahead

This cake is ideal for making ahead.

Assemble it the day before serving and refrigerate overnight. The texture becomes softer and more cohesive as the layers absorb some of the frosting and syrup.

Storage

Store the cake covered in the refrigerator for up to 3 days.

Because the frosting is sour cream based, keep the cake refrigerated until shortly before serving.

  • Preheat the oven
  • Preheat the oven to 350°F (175°C). Grease and line an 18 cm / 7-inch round cake pan with parchment paper.
  • Beat the eggs and sugar
  • Add the eggs, sugar and salt to a large bowl. Beat with an electric mixer for 4–5 minutes, until pale, thick and fluffy.

  • Add the fillings
  • Fold the poppy seeds into the first bowl, chopped walnuts into the second and prepared raisins into the third.
  • Bake the layers
  • Bake each layer separately for approximately 25–30 minutes, or until lightly golden and a toothpick inserted into the centre comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely.
  • Make the simple syrup
  • Combine the sugar and water in a small saucepan. Heat gently until the sugar dissolves completely, then remove from the heat and cool.

Notes

  • Use full-fat sour cream, preferably around 18%, for the best cake texture and a thicker frosting.
  • If your sour cream is thinner, refrigerate the prepared frosting before assembling the cake.
  • The raisins should be thoroughly dried after soaking so they don’t add excess moisture to the batter.
  • Bake the three layers separately so each one keeps its distinctive flavor and appearance.
  • Depending on your oven and cake pan, baking time may vary slightly. Begin checking each layer around the 25-minute mark.
  • For the best texture, assemble the cake at least 6 hours before serving. Overnight chilling is even better
  • If the baked layers are unusually tall, they can be sliced horizontally to create additional thinner layers, although this is optional.
