Cheesy garlic pull-apart bread is one of those easy appetizers that disappears fast. A crusty round loaf is filled with buttery garlic, melted mozzarella and cheddar, then baked until hot, gooey and golden.

It’s simple to make, fun to serve and perfect for parties, game day, potlucks or holiday gatherings.

Why You’ll Love This Cheesy Garlic Pull-Apart Bread

This recipe looks impressive but requires very little prep.

The bread gets crisp around the edges while staying soft inside, and every cut is packed with melted cheese and garlic butter.

It’s also made for sharing. Just place it in the center of the table and let everyone pull off a cheesy piece.

Ingredient Notes

Bread:
Use a round sourdough or crusty artisan loaf. A sturdy loaf works best because it holds its shape once cut and stuffed.

Mozzarella:
Mozzarella gives the bread that stretchy, gooey cheese pull.

Cheddar:
Cheddar adds extra flavor and a little more color.

Butter:
Melted butter carries the garlic into all the cuts in the bread.

Garlic:
Fresh minced garlic gives the best flavor.

Parsley:
Fresh parsley adds color and freshness and keeps the bread from feeling too heavy.

How to Make Cheesy Garlic Pull-Apart Bread

Start by slicing the loaf in a crosshatch pattern, cutting deeply without slicing all the way through the bottom.

Mix the melted butter with garlic, parsley, salt and pepper.

Drizzle and spoon the garlic butter into the cuts, making sure it reaches deep into the loaf.

Stuff the mozzarella and cheddar between the bread sections.

Wrap the loaf loosely in foil and bake until hot and the cheese begins to melt.

Uncover and continue baking until the cheese is fully melted and the top is golden.

Serve warm and pull apart at the table.

Tips for the Best Pull-Apart Bread

Don’t cut all the way through the bottom of the loaf. You want the bread to stay together while still being easy to pull apart.

Take your time getting the garlic butter into the deeper cuts.

For the best cheese pull, use freshly shredded mozzarella if possible.

Bake covered first so the inside heats through without over-browning the top.

Then uncover at the end so the cheese can bubble and turn golden.

Make Ahead

You can assemble the bread several hours ahead.

Wrap it tightly and refrigerate until ready to bake.

Let it sit at room temperature for about 15–20 minutes before baking if it has been chilled.

Serving Ideas

Serve this bread warm as an appetizer or side.

It’s especially good with soup, pasta, grilled meats or a party spread.

A crusty artisan loaf filled with garlic butter, mozzarella and cheddar, then baked until gooey, golden and perfect for sharing.

Ingredients

  • Bread
  • 1 round sourdough or crusty artisan loaf, about 1 lb / 450 g

  • Garlic Butter
  • 1/2 cup unsalted butter, melted

  • 3 garlic cloves, minced

  • 1 tablespoon chopped fresh parsley

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • Cheese
  • 2 cups shredded mozzarella

  • 1/2 cup shredded cheddar

Directions

  • Preheat the oven
  • Preheat the oven to 375°F (190°C).
  • Cut the bread
  • Place the loaf on a cutting board. Using a serrated knife, cut the bread in a crosshatch pattern, slicing deeply in both directions without cutting all the way through the bottom.
  • Make the garlic butter
  • In a small bowl, stir together the melted butter, garlic, parsley, salt and black pepper.
  • Add the garlic butter
  • Place the loaf on a large piece of foil. Spoon the garlic butter into the cuts, making sure it reaches between the bread sections.
  • Add the cheese
  • Stuff the mozzarella and cheddar evenly into the cuts throughout the loaf.
  • Bake covered
  • Wrap the loaf loosely in foil and bake for 15 minutes.
  • Bake uncovered
  • Open the foil and bake for another 5–10 minutes, or until the cheese is fully melted and the top of the bread is golden and crisp.
  • Serve
  • Serve warm and let everyone pull apart the cheesy bread pieces.

Notes

  • Use a sturdy round loaf so the bread holds together after cutting and stuffing.
  • Do not cut all the way through the bottom of the loaf.
  • Freshly shredded cheese melts more smoothly than many pre-shredded varieties.
  • If assembling ahead, refrigerate the stuffed loaf and let it sit at room temperature for 15–20 minutes before baking.
  • For a slightly crispier top, broil for 1–2 minutes at the end, watching closely so the bread does not burn.
