Cherry Cottage Cheese Mini Bakes

Jump to Recipe

These Cherry Cottage Cheese Mini Bakes are soft, lightly sweet and surprisingly simple to make. Blending the cottage cheese gives them a smoother, more delicate texture, while the cherries add little bursts of tart fruit throughout.

They work nicely for breakfast or brunch, but they’re also light enough to serve as a simple dessert.

Why You’ll Love This Recipe

  • Made with just a handful of simple ingredients
  • Soft, creamy texture without being heavy
  • Easy individual portions
  • Works for breakfast, brunch or a lighter dessert

Ingredient Notes

Cottage cheese: Use 2% or 4% cottage cheese for the best texture and flavour.

Cherries: Fresh or frozen pitted cherries both work. Frozen cherries should be thawed and drained very well before using.

Cornstarch: Helps the mini bakes hold their shape without making them dense.

Vanilla: Adds warmth and makes the cottage cheese mixture taste a little more dessert-like.

How to Make Cherry Cottage Cheese Mini Bakes

Prepare the Pan: Preheat the oven to 350°F / 180°C. Lightly grease 6 standard muffin cups or small ramekins.

Blend the Mixture: Add the cottage cheese, eggs, sugar, cornstarch, vanilla and salt to a blender or food processor. Blend until mostly smooth.

Add the Cherries: If using frozen cherries, thaw and drain them very well first so excess liquid doesn’t make the mixture watery. Fold in about two-thirds of the cherries, reserving the rest for topping.

Fill: Divide the mixture evenly between the prepared muffin cups or ramekins. Top each one with a few reserved cherries.

Bake: Bake for 24–28 minutes, until the centres are set and the tops are lightly golden. Avoid overbaking so the centres stay soft and tender.

Cool: Let the mini bakes cool in the pan for about 10 minutes before removing. They will firm up slightly as they cool and hold their shape better.

Serve: Enjoy warm, at room temperature or chilled.

Tips

  • Blend the cottage cheese mixture thoroughly for the smoothest texture.
  • Drain the cherries well, especially if using frozen fruit.
  • Don’t overbake; the centres should be set but still tender.
  • Let them cool before removing them from the pan so they don’t fall apart.

Variations

Swap the cherries for blueberries, raspberries or chopped peaches.

For a slightly sweeter finish, dust lightly with powdered sugar just before serving.

Storage

Store the mini bakes in an airtight container in the refrigerator for up to 3 days. Serve chilled or gently reheat before serving.
