Ingredient Notes

Pork: Pork shoulder gives you especially juicy, flavorful skewers. Pork loin also works well if you prefer a leaner option.

Garlic: Freshly minced garlic gives the marinade its best flavor.

Onion: Grated or very finely minced onion adds moisture and savory flavor to the pork.

Lemon juice: Adds freshness and balances the richness of the pork.

Parsley and dill: Fresh herbs give the skewers a bright, summery flavor.

Paprika: Adds mild warmth and helps give the pork beautiful color as it grills.

How to Make Garlic Herb Grilled Pork Skewers

1. Prepare the Pork

Cut the pork into evenly sized cubes so the pieces cook at approximately the same rate.

2. Make the Marinade

In a large bowl, combine the olive oil, lemon juice, grated onion, garlic, parsley, dill, paprika, salt and black pepper.

Add the pork and toss until every piece is well coated.

3. Marinate

Cover and refrigerate for at least 2 hours. For even more flavor, the pork can be marinated overnight.

4. Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes before grilling.

Thread the pork onto the skewers, leaving a little space between the pieces so the heat can circulate.

5. Grill

Preheat the grill to medium-high heat and lightly oil the grates.

Grill the skewers for about 10–12 minutes, turning every few minutes, until the pork is browned, lightly charred and cooked through.

6. Rest and Serve

Remove the skewers from the grill and let the pork rest for a few minutes before serving.

Garnish with additional parsley and serve with lemon wedges if desired.

Tips

  • Cut the pork into similar-sized cubes for even cooking.
  • Don’t pack the pork too tightly onto the skewers.
  • Marinate for at least 2 hours for the best flavor.
  • Pork shoulder will stay especially juicy on the grill.
  • Turn the skewers every few minutes rather than constantly moving them.
  • Let the cooked pork rest briefly before serving.

Variations

Add vegetables: Alternate the pork with chunks of bell pepper, zucchini or onion.

Add some heat: Mix a pinch of red pepper flakes into the marinade.

Change the herbs: Replace the dill with oregano or add a little fresh thyme.

Indoor option: Cook the skewers on a grill pan or under the broiler when outdoor grilling isn’t possible.

Serving Suggestions

Serve these pork skewers with:

  • grilled vegetables
  • roasted or grilled potatoes
  • rice
  • tomato and cucumber salad
  • flatbread or pita
  • tzatziki or garlic yogurt sauce

Make Ahead

The pork can be cut and marinated the night before. Keep it covered in the refrigerator and thread it onto the skewers shortly before grilling.

Storage

Store leftover pork in an airtight container in the refrigerator for up to 3 days.

Reheat gently in a skillet, oven or air fryer until warmed through.
